Head Chef
Matthew Sanderson brings more than 20 years of experience in luxury hospitality to Clara. Beginning his career at the hatted restaurant Cavau in Wollongong, he went on to hold senior culinary roles at renowned destinations including Orpheus Island Lodge and Lizard Island Resort, developing a reputation for creating memorable dining experiences shaped by exceptional produce and a strong connection to place.
At Clara, Matthew’s vision is to showcase the very best of South Australian ingredients through seasonal menus that reflect the character of the Clare Valley. Guided by sustainability and thoughtful sourcing, his approach celebrates the region’s people, produce and flavours.
